- Preheat oven to 350°F and grease a 9x5-inch loaf pan.
- Mash bananas in a large bowl until mostly smooth.
- Stir in melted butter until combined.
- Mix in brown sugar, egg, and vanilla extract.
- Add baking soda and salt, stir well.
- Fold in flour gently until just combined (don't overmix).
- Add chocolate chips or nuts if using.
- Pour batter into prepared pan.
- Bake 55-65 minutes until toothpick comes out clean.
- Cool 10 minutes in pan, then transfer to cooling rack.
