Ingredients
  

  • cups all-purpose flour
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 1 tablespoon granulated sugar
  • ¼ teaspoon salt
  • 1 large egg
  • cups buttermilk
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract

Method
 

  1. Whisk flour, baking powder, baking soda, sugar, and salt in a large bowl.
  2. Beat egg, buttermilk, melted butter, and vanilla in a separate bowl.
  3. Combine wet and dry ingredients; stir until just mixed (lumps okay).
  4. Rest batter for 5 minutes.
  5. Heat a nonstick skillet over medium heat; grease lightly.
  6. Pour ¼ cup batter per pancake.
  7. Cook until bubbles form on surface, approximately 2-3 minutes.
  8. Flip once; cook 1-2 more minutes until golden.
  9. Serve immediately with butter and maple syrup.
