- Whisk flour, baking powder, baking soda, sugar, and salt in a large bowl.
- Beat egg, buttermilk, melted butter, and vanilla in a separate bowl.
- Combine wet and dry ingredients; stir until just mixed (lumps okay).
- Rest batter for 5 minutes.
- Heat a nonstick skillet over medium heat; grease lightly.
- Pour ¼ cup batter per pancake.
- Cook until bubbles form on surface, approximately 2-3 minutes.
- Flip once; cook 1-2 more minutes until golden.
- Serve immediately with butter and maple syrup.
