Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • cup vegetable oil
  • 2 large eggs
  • ½ cup sour cream
  • ¼ cup whole milk
  • 1 ½ tsp pure vanilla extract
  • 1 ½ cups fresh strawberries, diced
  • 1 tbsp coarse sugar (optional topping)

Method
 

  1. Preheat oven to 375°F. Line muffin tin.
  2. Whisk flour, sugar, baking powder, and salt.
  3. Mix oil, eggs, sour cream, milk, and vanilla separately.
  4. Combine wet into dry — don't overmix.
  5. Fold in diced strawberries.
  6. Fill muffin cups ¾ full. Top with coarse sugar.
  7. Bake 18–22 minutes until golden and set.
  8. Cool 5 minutes in tin, then transfer to wire rack.
