Ingredients
  

  • For the Peach Filling:
  • 6-7 medium fresh peaches (about 6 cups sliced)
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon vanilla extract
  • For the Crisp Topping:
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ¾ cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Pinch of salt
  • ½ cup (1 stick) cold unsalted butter, cubed

Method
 

  1. Preheat oven to 350°F.
  2. Slice peaches into ½-inch slices and place in baking dish.
  3. Toss peaches with granulated sugar, cornstarch, lemon juice, and vanilla. Spread evenly.
  4. In a bowl, combine oats, flour, brown sugar, cinnamon, nutmeg, and salt.
  5. Cut cold butter into oat mixture until pea-sized crumbles form.
  6. Sprinkle topping evenly over peaches.
  7. Bake 38-42 minutes until golden and bubbling.
  8. Cool for 10-15 minutes before serving.
  9. Serve warm with vanilla ice cream or whipped cream.

Notes

Store covered in refrigerator up to 5 days. Can be frozen up to 3 months. Substitute frozen peaches if fresh aren't available (add extra cornstarch and baking time).
