Ingredients
  

  • 12 oz gluten-free rotini or fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1 English cucumber, diced
  • ½ cup red onion, thinly sliced
  • ½ cup Kalamata olives, pitted and halved
  • ½ cup crumbled feta cheese
  • ⅓ cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Cook pasta according to package directions; drain and rinse under cold water.
  2. Prep vegetables while pasta cools.
  3. Whisk together olive oil, vinegar, mustard, garlic, oregano, salt, and pepper.
  4. Combine pasta, vegetables, olives, and feta in a large bowl.
  5. Pour dressing over salad and toss gently.
  6. Refrigerate at least 30 minutes before serving.
